  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

  • 1 cup dark chocolate (70% cocoa)
  • 1 cup espresso or strong brewed coffee
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 4 large eggs
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Melt the dark chocolate in a double boiler or microwave until smooth and let cool slightly.
  3. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. Cream the butter and sugar together until fluffy. Add in the eggs, one at a time, followed by the vanilla extract, mixing well.
  5. Stir in the melted chocolate and espresso until fully blended.
  6. Gradually combine the dry ingredients with the wet ingredients, being careful not to over-mix.
  7. Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Let the cakes cool in the pan for 10 minutes before transferring to wire racks. Frost with your favorite espresso or chocolate buttercream.

Notes
