Ingredients
- 1 cup dark chocolate (70% cocoa)
- 1 cup espresso or strong brewed coffee
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter
- 4 large eggs
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Melt the dark chocolate in a double boiler or microwave until smooth and let cool slightly.
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the butter and sugar together until fluffy. Add in the eggs, one at a time, followed by the vanilla extract, mixing well.
- Stir in the melted chocolate and espresso until fully blended.
- Gradually combine the dry ingredients with the wet ingredients, being careful not to over-mix.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pan for 10 minutes before transferring to wire racks. Frost with your favorite espresso or chocolate buttercream.
