Ingredients

  • 1 cup ube puree
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 2 large eggs
  • 1 cup milk (whole or plant-based)
  • 4 tbsp melted butter
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat the waffle iron according to its instructions.
  2. If using fresh ube, steam or boil it until tender, then mash until smooth.
  3. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  4. In another bowl, whisk eggs, milk, melted butter, ube puree, and vanilla until well blended.
  5. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  6. Grease the waffle iron with non-stick spray or butter. Pour the batter into the iron and cook until golden and crisp, about 5 minutes.
  7. Serve immediately with toppings of your choice.
