Ingredients
- 1 cup ube puree
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- 2 tbsp sugar
- 2 large eggs
- 1 cup milk (whole or plant-based)
- 4 tbsp melted butter
- 1 tsp vanilla extract
- ¼ tsp salt
Instructions
- Preheat the waffle iron according to its instructions.
- If using fresh ube, steam or boil it until tender, then mash until smooth.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, whisk eggs, milk, melted butter, ube puree, and vanilla until well blended.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- Grease the waffle iron with non-stick spray or butter. Pour the batter into the iron and cook until golden and crisp, about 5 minutes.
- Serve immediately with toppings of your choice.
Notes
Experiment with different toppings such as fresh fruits, whipped cream, or a drizzle of maple syrup.
