Ingredients

  • 4 boneless chicken breasts or thighs
  • 1 cup breadcrumbs (panko or Italian-style)
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, freshly grated
  • 1/2 cup Parmesan cheese, grated
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • Fresh basil and oregano, chopped
  • Olive oil, for frying
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parsley, salt, and pepper.
  3. Season the chicken cutlets with salt and pepper.
  4. Dredge each cutlet in flour, coat in egg, and press into the breadcrumb mixture until evenly covered.
  5. Heat olive oil in a skillet over medium heat. Cook the cutlets for 3-4 minutes per side until golden brown.
  6. Transfer to a baking dish, spoon marinara over each piece, and sprinkle mozzarella and Parmesan on top.
