Ingredients
- 4 boneless chicken breasts or thighs
- 1 cup breadcrumbs (panko or Italian-style)
- 2 cups marinara sauce
- 1 cup mozzarella cheese, freshly grated
- 1/2 cup Parmesan cheese, grated
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Fresh basil and oregano, chopped
- Olive oil, for frying
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parsley, salt, and pepper.
- Season the chicken cutlets with salt and pepper.
- Dredge each cutlet in flour, coat in egg, and press into the breadcrumb mixture until evenly covered.
- Heat olive oil in a skillet over medium heat. Cook the cutlets for 3-4 minutes per side until golden brown.
- Transfer to a baking dish, spoon marinara over each piece, and sprinkle mozzarella and Parmesan on top.
- Bake until the cheese is bubbly and golden, about 20 minutes.
- Garnish with fresh basil before serving.
Notes
Avoid overcrowding the skillet for the best crisp. Let the fried cutlets rest before adding sauce to prevent sogginess.
