Ingredients

  • 1 cup mascarpone cheese

  • 1 ripe mango
  • ½ cup passionfruit puree

  • Strong coffee or espresso
  • 2 tablespoons sugar (for coffee)

Instructions

  1. Prepare the Coffee Mixture: Brew a cup of strong coffee or espresso and allow it to cool to room temperature. Add 2 tablespoons of sugar and stir until dissolved. Set aside.
  2. Make the Cream Mixture: In a mixing bowl, combine mascarpone cheese, heavy cream, ½ cup of sugar, and vanilla extract. Beat together until soft peaks form.
  3. Prepare the Fruit Puree: Blend the ripe mango until smooth. Mix in passionfruit puree and set aside.
  4. Layer the Tiramisu: Start with a layer of the coffee mixture in a baking dish, dunk ladyfingers quickly and lay them in a single layer, then spread half the mascarpone mixture over. Spoon half the mango-passionfruit puree over the cream.
  5. Repeat the Layers: Repeat with another layer of coffee-soaked ladyfingers, then the remaining mascarpone mixture and fruit puree.
  6. Chill and Serve: Cover and refrigerate for at least 4 hours before serving. Dust with cocoa powder or crushed fruit for garnish.

Notes

Allowing the dessert to chill overnight enhances the flavors. Use fresh fruit for garnish.
