- 1 cup mascarpone cheese
- 1 cup heavy cream
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 ripe mango
- ½ cup passionfruit puree
- Ladyfingers
- Strong coffee or espresso
- 2 tablespoons sugar (for coffee)
Instructions
- Prepare the Coffee Mixture: Brew a cup of strong coffee or espresso and allow it to cool to room temperature. Add 2 tablespoons of sugar and stir until dissolved. Set aside.
- Make the Cream Mixture: In a mixing bowl, combine mascarpone cheese, heavy cream, ½ cup of sugar, and vanilla extract. Beat together until soft peaks form.
- Prepare the Fruit Puree: Blend the ripe mango until smooth. Mix in passionfruit puree and set aside.
- Layer the Tiramisu: Start with a layer of the coffee mixture in a baking dish, dunk ladyfingers quickly and lay them in a single layer, then spread half the mascarpone mixture over. Spoon half the mango-passionfruit puree over the cream.
- Repeat the Layers: Repeat with another layer of coffee-soaked ladyfingers, then the remaining mascarpone mixture and fruit puree.
- Chill and Serve: Cover and refrigerate for at least 4 hours before serving. Dust with cocoa powder or crushed fruit for garnish.
Notes
Allowing the dessert to chill overnight enhances the flavors. Use fresh fruit for garnish.
