Ingredients

  • 2-3 lbs Beef Chuck Roast
  • 2 lbs Yukon Gold or Russet Potatoes, halved or quartered
  • 6-8 cloves Fresh Garlic, minced
  • 1/2 cup Unsalted Butter
  • 2 cups Low-Sodium Beef Broth
  • 2-3 sprigs Fresh Rosemary or Thyme
  • 1 large Onion, sliced
  • 2 Carrots, chopped
  • Salt and Pepper, to taste

Instructions

  1. Cut the beef into large chunks.
  2. Sear the beef in butter (optional) until browned on all sides.
  3. Layer the potatoes and vegetables in the slow cooker.
  4. Place seared beef on top, add garlic, broth, butter, salt, pepper, and herbs.
  5. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  6. Stir gently before serving and garnish with fresh herbs.

Notes

Avoid lifting the lid during cooking to maintain heat. Adjust seasoning according to your taste, and remove the lid for the last 30 minutes if the dish is too liquidy.
