Ingredients
- 8 oz rotini or penne pasta
- 2 cups grilled or roasted chicken breast, chopped
- 4 cups romaine lettuce, chopped
- 1 cup Caesar dressing
- 1/2 cup freshly grated Parmesan cheese
- 1 cup croutons
- Salt and black pepper to taste
Instructions
- Cook the pasta: Boil salted water, add pasta, and cook until al dente. Drain and rinse with cold water.
- Prepare the chicken: Season raw chicken with salt and pepper; grill for 6-7 minutes per side until cooked through. Let rest before chopping.
- Combine ingredients: In a large bowl, combine cooked pasta, sliced chicken, and chopped romaine. Toss gently.
- Add dressing: Pour Caesar dressing over the salad, starting with less and adding more to taste. Add Parmesan cheese and black pepper.
- Add croutons: Sprinkle croutons on top just before serving.
- Taste and adjust: Taste the salad and adjust seasoning or add more dressing if necessary.
- Serve: Enjoy fresh or refrigerate for later. This dish can be served cold or warm.
Notes
Substitute chicken with grilled shrimp or chickpeas for a vegetarian option. Gluten-free pasta and vegan Caesar dressing are also great alternatives.
