Ingredients

  • 1-2 pounds chicken thighs (bone-in, skinless or boneless)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cream cheese
  • 1 sheet puff pastry
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Fresh thyme or rosemary to taste
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat, add chopped onions and sauté until softened.
  3. Add minced garlic and diced chicken thighs to the skillet, season with salt, pepper, and herbs. Cook until chicken is no longer pink, about 8-10 minutes.
  4. Remove from heat and stir in cheese mixture until melted and well combined.
  5. Roll out puff pastry on a floured surface and cut into 4×4 inch squares.
  6. Place a scoop of the filling in the center of each square, fold over and seal edges with a fork.
  7. Brush tops lightly with beaten egg.
  8. Bake for 20-25 minutes or until golden and puffy.

Notes

Keep the pastry chilled until ready to use to ensure it remains flaky. Avoid overstuffing to prevent tearing.
