Ingredients
- 1-2 pounds chicken thighs (bone-in, skinless or boneless)
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup cream cheese
- 1 sheet puff pastry
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons olive oil
- Fresh thyme or rosemary to taste
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat, add chopped onions and sauté until softened.
- Add minced garlic and diced chicken thighs to the skillet, season with salt, pepper, and herbs. Cook until chicken is no longer pink, about 8-10 minutes.
- Remove from heat and stir in cheese mixture until melted and well combined.
- Roll out puff pastry on a floured surface and cut into 4×4 inch squares.
- Place a scoop of the filling in the center of each square, fold over and seal edges with a fork.
- Brush tops lightly with beaten egg.
- Bake for 20-25 minutes or until golden and puffy.
Notes
Keep the pastry chilled until ready to use to ensure it remains flaky. Avoid overstuffing to prevent tearing.
