Ingredients

  • 12 large fresh sea scallops
  • 4 tablespoons unsalted butter
  • Juice and zest of 1 fresh lemon
  • 2 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley or dill, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the scallops under cold water and pat them dry with a paper towel. Season both sides with salt and pepper.
  2. In a skillet over medium-high heat, melt 1 tablespoon of unsalted butter until bubbling.
  3. Carefully place the scallops in the skillet without overcrowding. Sear for 1.5 to 2 minutes on each side until golden brown.
  4. Remove the scallops and set aside. In the same skillet, add 3 more tablespoons of butter, adding minced garlic and sautéing for about 30 seconds.
  5. Lower heat, pour in lemon juice, add herbs, and stir until the sauce thickens slightly.
  6. Return the scallops to the pan, warming them in the sauce for 1 minute before serving. Drizzle the sauce over the scallops and garnish as desired.

Notes

Ensure scallops are dry before searing for a better crust. Do not overcrowd the pan.
