Ingredients
- 12 large fresh sea scallops
- 4 tablespoons unsalted butter
- Juice and zest of 1 fresh lemon
- 2 cloves fresh garlic, minced
- 2 tablespoons fresh parsley or dill, chopped
- Salt and pepper to taste
Instructions
- Rinse the scallops under cold water and pat them dry with a paper towel. Season both sides with salt and pepper.
- In a skillet over medium-high heat, melt 1 tablespoon of unsalted butter until bubbling.
- Carefully place the scallops in the skillet without overcrowding. Sear for 1.5 to 2 minutes on each side until golden brown.
- Remove the scallops and set aside. In the same skillet, add 3 more tablespoons of butter, adding minced garlic and sautéing for about 30 seconds.
- Lower heat, pour in lemon juice, add herbs, and stir until the sauce thickens slightly.
- Return the scallops to the pan, warming them in the sauce for 1 minute before serving. Drizzle the sauce over the scallops and garnish as desired.
Notes
Ensure scallops are dry before searing for a better crust. Do not overcrowd the pan.
