Ingredients
- 2 English cucumbers
- 4 heirloom tomatoes
- 8 oz fresh mozzarella
- 1/4 cup fresh basil leaves
- 3 tbsp balsamic glaze
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers into half-moons or rounds and cut the heirloom tomatoes into wedges or cubes.
- In a large salad bowl, combine the sliced cucumbers, heirloom tomatoes, and torn pieces of fresh mozzarella. Toss gently.
- Drizzle with olive oil and balsamic glaze. Start with a small amount and add more if needed.
- Season with a pinch of salt and freshly cracked black pepper, and toss gently again.
- Sprinkle fresh basil leaves on top and serve immediately, or refrigerate for about an hour if preferred chilled.
