Ingredients

  • 4 large Egg Whites
  • 1 cup Granulated Sugar
  • 1 cup Powdered Sugar
  • 1/4 tsp Cream of Tartar
  • 1 tsp Pure Peppermint Extract
  • 1 cup Dark or Semi-sweet Chocolate (melting wafers or chips)

Instructions

  1. Preheat your oven to 200°F (95°C).
  2. Line a baking sheet with parchment paper.
  3. In a clean bowl, whip egg whites on medium speed until foamy.
  4. Gradually add cream of tartar, continuing to beat until soft peaks form.
  5. Slowly beat in granulated sugar until the mixture is glossy and stiff peaks form.
  6. Gently fold in powdered sugar and peppermint extract.
  7. Transfer meringue to a piping bag and pipe small rounds onto the prepared baking sheet.
  8. Bake for about 2 hours or until completely dry and easily lift off the parchment.
  9. Allow meringues to cool in the oven with the door cracked open for about 30 minutes.
  10. Melt chocolate and drizzle it over the cooled meringues.
  11. Serve and enjoy!
