Ingredients
- 4 large Egg Whites
- 1 cup Granulated Sugar
- 1 cup Powdered Sugar
- 1/4 tsp Cream of Tartar
- 1 tsp Pure Peppermint Extract
- 1 cup Dark or Semi-sweet Chocolate (melting wafers or chips)
Instructions
- Preheat your oven to 200°F (95°C).
- Line a baking sheet with parchment paper.
- In a clean bowl, whip egg whites on medium speed until foamy.
- Gradually add cream of tartar, continuing to beat until soft peaks form.
- Slowly beat in granulated sugar until the mixture is glossy and stiff peaks form.
- Gently fold in powdered sugar and peppermint extract.
- Transfer meringue to a piping bag and pipe small rounds onto the prepared baking sheet.
- Bake for about 2 hours or until completely dry and easily lift off the parchment.
- Allow meringues to cool in the oven with the door cracked open for about 30 minutes.
- Melt chocolate and drizzle it over the cooled meringues.
- Serve and enjoy!
