Delightfully creamy and fruity ice cream bars made with Greek yogurt and fresh peaches, perfect for hot summer days.

Ingredients

  • 2 cups Greek yogurt (regular or low-fat)
  • 2 cups fresh peaches, sliced (or frozen/canned if out of season)
  • 2-3 tablespoons honey or agave syrup (to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare your ingredients: Wash and slice the fresh peaches.
  2. Blend the Greek yogurt, sliced peaches, honey or agave syrup, lemon juice, and vanilla extract until smooth.
  3. Taste the mixture and adjust sweetness if needed.
  4. Pour the mixture into silicone molds or paper cups and insert sticks if desired.
  5. Freeze for at least 4-6 hours or until solid.
  6. Remove the bars from the molds and enjoy!
