- Winter squash (Butternut, acorn, or delicata)
- 3 tablespoons miso paste (white or yellow)
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 2 cloves fresh garlic, minced
- Sea salt and black pepper to taste
- Optional garnishes: chopped green onions or toasted sesame seeds
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the squash by slicing it and scooping out seeds (for butternut) or cutting it into wedges (for acorn).
- In a bowl, whisk together the miso paste, maple syrup, olive oil, garlic, and a pinch of black pepper.
- Coat the squash slices with the miso glaze.
- Arrange the squash on a baking sheet lined with parchment paper and roast for 25-35 minutes, turning halfway through.
- Serve warm, garnished with green onions or sesame seeds.
Notes
Ensure the squash pieces are uniform in size for even roasting. Adjust maple syrup for sweetness as preferred.
