Ingredients

  • Winter squash (Butternut, acorn, or delicata)
  • 3 tablespoons miso paste (white or yellow)
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 2 cloves fresh garlic, minced

  • Optional garnishes: chopped green onions or toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by slicing it and scooping out seeds (for butternut) or cutting it into wedges (for acorn).
  3. In a bowl, whisk together the miso paste, maple syrup, olive oil, garlic, and a pinch of black pepper.
  4. Coat the squash slices with the miso glaze.
  5. Arrange the squash on a baking sheet lined with parchment paper and roast for 25-35 minutes, turning halfway through.
  6. Serve warm, garnished with green onions or sesame seeds.
