Ingredients

  • 2 cups chopped mixed dried fruit (cherries, apricots, raisins)
  • 1 cup chopped toasted pecans or walnuts (optional)
  • 2 cups all-purpose flour (or gluten-free blend)
  • 3 large eggs (or flaxseed egg for vegan version)
  • 1 cup brown sugar (or coconut sugar)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1/2 cup unsalted butter (or coconut oil)
  • 1 teaspoon baking powder
  • Zest of 1 orange
  • Optional: dash of lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a traybake pan (9 x 13 inches) with parchment paper.
  3. In a large bowl, whisk together the flour, baking powder, and spices.
  4. In another bowl, beat softened butter with brown sugar until pale and fluffy, about 3-5 minutes.
  5. Add eggs one at a time, mixing well after each.
  6. Gradually fold in the flour mixture.
  7. Add the chopped dried fruits and nuts, and gently fold.
  8. Spread the batter evenly in the prepared pan.
  9. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice into squares and serve.

Notes
