Ingredients
- 2 cups chopped mixed dried fruit (cherries, apricots, raisins)
- 1 cup chopped toasted pecans or walnuts (optional)
- 2 cups all-purpose flour (or gluten-free blend)
- 3 large eggs (or flaxseed egg for vegan version)
- 1 cup brown sugar (or coconut sugar)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon allspice
- 1/2 cup unsalted butter (or coconut oil)
- 1 teaspoon baking powder
- Zest of 1 orange
- Optional: dash of lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- Line a traybake pan (9 x 13 inches) with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and spices.
- In another bowl, beat softened butter with brown sugar until pale and fluffy, about 3-5 minutes.
- Add eggs one at a time, mixing well after each.
- Gradually fold in the flour mixture.
- Add the chopped dried fruits and nuts, and gently fold.
- Spread the batter evenly in the prepared pan.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice into squares and serve.
Notes
Serve warm or at room temperature. Can be drizzled with a glaze of powdered sugar and orange juice for a festive touch.
