Ingredients
- 2 fresh cucumbers, chopped
- 2 juicy tomatoes, chopped
- 1 bell pepper (red, yellow, or orange), chopped
- 200g feta cheese, crumbled
- Fresh herbs (parsley, basil, or mint), chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop the cucumbers, tomatoes, and bell peppers into bite-sized pieces.
- Crumble the feta cheese over the chopped veggies.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour it over the salad and toss gently.
- Roughly chop fresh herbs and scatter on top.
