- 1 cup Cranberry Sauce
- 1/2 cup Balsamic Vinegar
- 2 Onions, diced
- 4 cloves Garlic, minced
- 2 sprigs Thyme, fresh
- 2 sprigs Rosemary, fresh
- 2 cups Beef Broth
- Olive Oil, for searing
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef with salt and pepper and sear in olive oil over medium-high heat until browned on all sides (about 3-4 minutes per side).
- Add diced onions and minced garlic to the skillet, sautéing until translucent (about 5 minutes).
- Deglaze the pan with balsamic vinegar, scraping the browned bits.
- Add cranberry sauce, thyme, rosemary, and beef broth; stir to combine.
- Nestle the seared beef into the mixture.
- Cover the skillet and braise in the oven for 2.5 to 3 hours, or until fork-tender.
- Let the roast rest for 15 minutes before slicing.
Notes
For added flavor, consider incorporating a splash of red wine before braising. Letting the roast rest is crucial for juicy slices.
