Ingredients

  • 2 cups fresh broccoli florets
  • 2 cups Yukon gold potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup seasoned breadcrumbs
  • 1 tablespoon fresh thyme (or herbs of choice)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the broccoli into bite-sized pieces and dice the Yukon gold potatoes into small cubes.
  3. Blanch the broccoli in boiling salted water for 2 minutes, then drain and set aside.
  4. In a large bowl, mix blanched broccoli, diced potatoes, minced garlic, olive oil, and herbs until coated.
  5. Sprinkle breadcrumbs over the mixture and toss gently to coat.
  6. Spread the mixture on a parchment-lined baking sheet in a single layer.
