Ingredients
- 2 cups fresh broccoli florets
- 2 cups Yukon gold potatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup seasoned breadcrumbs
- 1 tablespoon fresh thyme (or herbs of choice)

Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop the broccoli into bite-sized pieces and dice the Yukon gold potatoes into small cubes.
- Blanch the broccoli in boiling salted water for 2 minutes, then drain and set aside.
- In a large bowl, mix blanched broccoli, diced potatoes, minced garlic, olive oil, and herbs until coated.
- Sprinkle breadcrumbs over the mixture and toss gently to coat.
- Spread the mixture on a parchment-lined baking sheet in a single layer.
- Bake for 25-30 minutes, stirring halfway through, until golden and crispy.
- Let cool for a few minutes before serving warm.
