Ingredients
- Pasta (spaghetti, penne, or gluten-free)
- 1 cup Greek yogurt
- 3 cloves garlic, minced
- 1 cup mushrooms (cremini or button), sliced
- 2 tablespoons olive oil
- Fresh herbs (parsley, basil, or thyme), chopped
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Reserve 1 cup pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant and golden brown, about 1 to 2 minutes.
- Add sliced mushrooms and cook until tender, around 5 minutes.
- Reduce heat to low, stir in Greek yogurt, and mix until creamy. If too thick, add reserved pasta water until desired consistency.
- Add pasta to the skillet and toss well to coat in sauce. Season generously with salt and pepper.
- Fold in freshly chopped herbs and adjust seasoning as needed.
Notes
Use high-quality yogurt for the best flavor and creaminess; avoid high heat once yogurt is added to prevent curdling.
