Instructions

  1. Cook pasta according to package directions. Reserve 1 cup pasta water, then drain.

  3. Add sliced mushrooms and cook until tender, around 5 minutes.
  4. Reduce heat to low, stir in Greek yogurt, and mix until creamy. If too thick, add reserved pasta water until desired consistency.
  5. Add pasta to the skillet and toss well to coat in sauce. Season generously with salt and pepper.
  6. Fold in freshly chopped herbs and adjust seasoning as needed.
