Ingredients
- Pizza Dough (store-bought or homemade)
- 2 tablespoons Olive Oil
- 1 cup Cheese (mozzarella and Parmesan or your choice)
- 1 bell pepper, chopped
- 1 cup spinach
- 1 cup mushrooms, chopped
- 1 onion, chopped
- 2 eggs (or substitute with tofu for vegan option)
- Salt and pepper to taste
- Fresh herbs (basil, parsley, or thyme)
Instructions
- Preheat the oven to 425°F (220°C).
- Roll out pizza dough onto a greased baking sheet.
- Heat olive oil in a skillet over medium heat, then sauté onions and mushrooms for 3-4 minutes.
- Add bell peppers and spinach, and sauté until spinach wilts. Season with salt and pepper.
- Spread a thin layer of cheese on the prepared crust.
- Evenly distribute the sautéed vegetables over the crust.
- Crack eggs on top of the vegetables, creating little wells for them.
- Add more cheese on top of everything.
- Bake for 15-20 minutes, or until eggs are set and crust is golden.
- Remove from the oven, garnish with fresh herbs, slice, and serve.
Notes
Feel free to customize toppings based on your preferences. Leftover veggies can be used as toppings.
