Ingredients
- 4 large Russet potatoes
- Vegetable oil for frying
- Sea salt, to taste
- 1 tsp garlic powder
- 1 tsp paprika (sweet, smoked, or hot)
- Fresh herbs (rosemary or thyme), optional
Instructions
- Wash and peel the potatoes, then cut into thin sticks, about a quarter-inch thick.
- Soak the cut potato sticks in cold water for at least 30 minutes to remove excess starch.
- Drain the water and spread the sticks on a kitchen towel to pat them dry thoroughly.
- Heat 2-3 inches of vegetable oil in a deep pot or heavy skillet until it reaches about 350-375°F.
- Fry the dried potato sticks in small batches until golden brown, about 3-5 minutes.
- Remove from oil and place on paper towels to drain, sprinkling with salt and additional seasonings immediately.
- Serve hot with your favorite dipping sauce.
Notes
For added flavor, consider topping with cheese or making loaded fries. Air-frying the sticks can reduce oil and maintain crunch.
