Ingredients

  • 4 large Russet potatoes
  • Vegetable oil for frying
  • Sea salt, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika (sweet, smoked, or hot)

Instructions

  1. Wash and peel the potatoes, then cut into thin sticks, about a quarter-inch thick.
  2. Soak the cut potato sticks in cold water for at least 30 minutes to remove excess starch.
  3. Drain the water and spread the sticks on a kitchen towel to pat them dry thoroughly.
  4. Heat 2-3 inches of vegetable oil in a deep pot or heavy skillet until it reaches about 350-375°F.
  5. Fry the dried potato sticks in small batches until golden brown, about 3-5 minutes.
  6. Remove from oil and place on paper towels to drain, sprinkling with salt and additional seasonings immediately.
  7. Serve hot with your favorite dipping sauce.

Notes

For added flavor, consider topping with cheese or making loaded fries. Air-frying the sticks can reduce oil and maintain crunch.
