A light and refreshing jelly cake infused with the delicate floral notes of oolong tea and the sweetness of fresh grapes, perfect for summer gatherings.

Ingredients

  • 2 cups water
  • 2 tablespoons oolong tea leaves
  • 2 tablespoons gelatin
  • 1/2 cup cold water
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • Fresh grapes (red or green)

Instructions

  1. Brew the oolong tea by boiling 2 cups of water, steeping the tea leaves for about 5 minutes, then strain and let cool.
  2. Wash and slice the fresh grapes.
  3. Dissolve the gelatin by sprinkling it over 1/2 cup of cold water and letting it bloom for 5 minutes before gently heating it until fully dissolved.
  4. In a mixing bowl, combine the cooled oolong tea, dissolved gelatin, sugar, and lemon juice. Stir until blended.
  5. Pour a little mixture into a cake pan to cover the bottom, sprinkle grapes over it, and let it set in the fridge for 30 minutes.
  6. Pour the rest of the mixture on top with more grapes if desired.
  7. Cover and refrigerate for at least 4 hours until fully set.
  8. To serve, run a knife around the edge, invert onto a platter, slice, and serve chilled.
