Ingredients
- 2 cups fresh strawberries, hulled and chopped
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, cubed
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix 1 cup of flour, 1/2 cup of brown sugar, 1/4 teaspoon of salt, and 1/2 teaspoon of baking powder. Add 1/2 cup of cold, cubed butter and blend until crumbly.
- In another bowl, combine 2 cups of strawberries, 1/4 cup of granulated sugar, 1 tablespoon of lemon juice, and 2 tablespoons of flour. Mix gently.
- Press 2/3 of the crumb mixture into the baking dish, spread the strawberry filling over it, then sprinkle the remaining crumb mixture on top.
- Bake for 35-40 minutes or until the topping is golden brown and the strawberries are bubbling.
- Cool in the pan before slicing into squares and serve warm.
Notes
Serve with a scoop of vanilla ice cream or whipped cream for an extra treat.
