- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup fresh strawberries, diced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat together the softened butter and cream cheese until light and fluffy (about 2-3 minutes).
- Gradually add in the granulated sugar and brown sugar; mix until smooth.
- Add the eggs and vanilla extract, beating until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt; gradually mix the dry ingredients into the wet ingredients without overmixing.
- Gently fold in the chopped strawberries.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them about two inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For lighter options, substitute butter with coconut oil or use crème fraîche instead of cream cheese. You can also use frozen strawberries if fresh ones are not available.
