Ingredients
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup graham cracker crumbs
- 1 to 1.5 cups fresh strawberries, diced
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat together the butter, granulated sugar, and brown sugar until fluffy and light, about 2-3 minutes.
- Add the eggs one at a time, mixing until fully incorporated. Then add the vanilla extract.
- In a separate bowl, whisk the flour, baking powder, and baking soda together. Gradually add to the butter mixture, mixing until just combined.
- Fold in the graham cracker crumbs and diced strawberries gently.
- Scoop the dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack and dust with powdered sugar.
Notes
For thicker cookies, chill the dough briefly before baking. You can also swap the strawberries for blueberries or raspberries.
