Delightful cookies that combine the classic flavors of cheesecake and fresh strawberries in a chewy, tender treat.

Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup graham cracker crumbs
  • 1 to 1.5 cups fresh strawberries, diced
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the butter, granulated sugar, and brown sugar until fluffy and light, about 2-3 minutes.
  3. Add the eggs one at a time, mixing until fully incorporated. Then add the vanilla extract.
  4. In a separate bowl, whisk the flour, baking powder, and baking soda together. Gradually add to the butter mixture, mixing until just combined.
  5. Fold in the graham cracker crumbs and diced strawberries gently.
  6. Scoop the dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack and dust with powdered sugar.

Notes

For thicker cookies, chill the dough briefly before baking. You can also swap the strawberries for blueberries or raspberries.
