Ingredients
- 12 manicotti shells
- 15 oz ricotta cheese
- 2 cups fresh spinach, sautéed
- 2 cups marinara sauce
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Prepare the Filling: Sauté chopped onions and minced garlic in olive oil until translucent. Add spinach and wilt. Combine sautéed mixture with ricotta, parsley, Parmesan, salt, and pepper in a bowl.
- Stuff the Manicotti: Fill each manicotti shell with the ricotta-spinach mixture.
- Assembly: Preheat oven to 375°F (190°C). Spread marinara sauce in a baking dish, place stuffed manicotti, cover with more sauce, and sprinkle with Parmesan.
- Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbly.
- Serve and Enjoy: Let cool slightly, garnish with basil, and serve with salad or garlic bread.
Notes
Taste as you go to adjust seasoning, and be careful not to overstuff the manicotti shells.
