A heartwarming dish of ricotta and spinach stuffed into tender pasta shells, baked with marinara sauce and topped with golden cheese.

Ingredients

  • 12 manicotti shells
  • 15 oz ricotta cheese
  • 2 cups fresh spinach, sautéed
  • 2 cups marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Prepare the Filling: Sauté chopped onions and minced garlic in olive oil until translucent. Add spinach and wilt. Combine sautéed mixture with ricotta, parsley, Parmesan, salt, and pepper in a bowl.
  2. Stuff the Manicotti: Fill each manicotti shell with the ricotta-spinach mixture.
  3. Assembly: Preheat oven to 375°F (190°C). Spread marinara sauce in a baking dish, place stuffed manicotti, cover with more sauce, and sprinkle with Parmesan.
  4. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbly.
  5. Serve and Enjoy: Let cool slightly, garnish with basil, and serve with salad or garlic bread.

Notes

Taste as you go to adjust seasoning, and be careful not to overstuff the manicotti shells.
