Ingredients
- 1 lb fresh carrots (peeled and cut into sticks), or baby carrots
- 1/4 cup pure maple syrup
- 3 tbsp unsalted butter (or coconut oil for dairy-free)
- 1/2 tsp sea salt
- Optional: pinch of cinnamon or nutmeg
Instructions
- Prepare the Carrots: If using whole carrots, peel them and cut them into sticks about 2 inches long. If using baby carrots, rinse and pat dry.
- Combine Ingredients: In your slow cooker, combine the carrots, maple syrup, butter, and salt. Add optional spices and toss gently to coat.
- Cook: Cover and set your slow cooker on low for 4 to 6 hours.
- Check for Doneness: About 30 minutes before serving, check for fork-tenderness.
- Serve Warm: Stir before serving to ensure every carrot is glazed in maple sauce.
Notes
For a brighter flavor, add a splash of fresh lemon juice in the last hour of cooking. Store leftovers in an airtight container for up to 3 days.
