Ingredients
- 1 lb shrimp, peeled and deveined
- 2 bell peppers, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 scallions, chopped
- Fresh cilantro, for garnish
- Sesame seeds, for garnish
Instructions
- Prep your ingredients by chopping vegetables and mincing garlic and ginger.
- In a large skillet or wok, heat sesame oil over medium-high heat until shimmering.
- Add shrimp to the pan in a single layer; cook for 1-2 minutes per side until pink, then remove from the pan.
- Add minced garlic and ginger to the same pan, stirring quickly to avoid burning.
- Add chopped vegetables and stir-fry for about 3-4 minutes until tender-crisp.
- Return the shrimp to the pan, add soy sauce, and stir to combine.
- Finish with scallions and fresh cilantro, serving over rice or noodles.
Notes
Make sure to prep your ingredients ahead of time as stir-frying goes quickly. Don’t overcrowd the pan for best results.
