Ingredients

  • 1 cup rolled oats
  • 2 cups vegetable broth
  • 1 cup mushrooms (button, shiitake, or portobello)
  • 2 cloves fresh garlic, minced
  • 1 tablespoon olive oil
  • Fresh thyme or parsley for garnish
  • Parmesan or feta cheese for topping
  • Salt and pepper to taste
  • Optional toppings: poached egg, avocado slices, hot sauce

Instructions

  1. In a saucepan, bring two cups of vegetable broth to a simmer. While it heats, measure out one cup of rolled oats.
  2. Stir the oats into the simmering broth. Lower the heat and cook for about 5 minutes, stirring occasionally until creamy.
  3. In a skillet over medium heat, add a tablespoon of olive oil. Toss in minced garlic and your choice of mushrooms. Sauté until golden brown.
  4. When the oats are creamy and cooked through, remove from heat and stir in your sautéed mix. Add a pinch of salt and pepper to taste.
  5. Serve the Savory Oatmeal in bowls, topped with fresh herbs, cheese, or a drizzle of hot sauce. Enjoy!
