Ingredients
- 1 cup rolled oats
- 2 cups vegetable broth
- 1 cup mushrooms (button, shiitake, or portobello)
- 2 cloves fresh garlic, minced
- 1 tablespoon olive oil
- Fresh thyme or parsley for garnish
- Parmesan or feta cheese for topping
- Salt and pepper to taste
- Optional toppings: poached egg, avocado slices, hot sauce
Instructions
- In a saucepan, bring two cups of vegetable broth to a simmer. While it heats, measure out one cup of rolled oats.
- Stir the oats into the simmering broth. Lower the heat and cook for about 5 minutes, stirring occasionally until creamy.
- In a skillet over medium heat, add a tablespoon of olive oil. Toss in minced garlic and your choice of mushrooms. Sauté until golden brown.
- When the oats are creamy and cooked through, remove from heat and stir in your sautéed mix. Add a pinch of salt and pepper to taste.
- Serve the Savory Oatmeal in bowls, topped with fresh herbs, cheese, or a drizzle of hot sauce. Enjoy!
