Delightful peppermint cookies perfect for the holiday season, infused with crushed candy canes for a festive crunch.

  • Total Time: 27 minutes
  • Yield: 24 cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed candy canes, plus extra for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  5. Gently fold in the crushed candy canes, reserving a handful for decorations.
  6. Scoop tablespoons of dough onto prepared baking sheets, leaving space between each.
  7. Bake for 10-12 minutes or until edges are lightly golden; the center may appear soft.
  8. Allow cooling for 5 minutes on the baking sheet before transferring to a wire rack. Sprinkle with reserved crushed candy canes while warm.
  9. Enjoy with family and friends!

Notes

For a dairy-free version, substitute butter with coconut oil or vegan butter. You can also use gluten-free flour blends.
