Ingredients

  • 2 ¾ cups All-Purpose Flour
  • 1 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1 large Egg
  • ½ cup Coarse Sugar (for rolling)
  • 1 tsp Baking Powder
  • 2 tsp Vanilla Extract
  • 1 cup Crushed Peppermint Candy Canes

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter and granulated sugar in a large bowl until the mixture is fluffy and light.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk the flour, baking powder, and a pinch of salt together. Gradually stir this dry mixture into the wet ingredients until just combined.
  5. Carefully fold in the crushed peppermint candy canes.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and coat in coarse sugar before placing on the prepared baking sheets.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet before transferring to a wire rack.
