- 2 ¾ cups All-Purpose Flour
- 1 cup Unsalted Butter, softened
- 1 cup Granulated Sugar
- 1 large Egg
- ½ cup Coarse Sugar (for rolling)
- 1 tsp Baking Powder
- 2 tsp Vanilla Extract
- 1 cup Crushed Peppermint Candy Canes
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter and granulated sugar in a large bowl until the mixture is fluffy and light.
- Add in the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk the flour, baking powder, and a pinch of salt together. Gradually stir this dry mixture into the wet ingredients until just combined.
- Carefully fold in the crushed peppermint candy canes.
- Scoop tablespoon-sized portions of dough, roll into balls, and coat in coarse sugar before placing on the prepared baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet before transferring to a wire rack.
- Enjoy fresh from the oven or store in a cookie jar.
