Ingredients

  • 1 lb flank steak (or sirloin)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 onion (sweet or yellow)
  • 3 cloves garlic (minced)
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 green onions (for garnish)

Instructions

  1. Slice the flank steak against the grain into thin strips.
  2. In a bowl, mix the sliced beef with soy sauce and cornstarch and let it marinate for at least 15 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add marinated flank steak to the pan, searing for about 2-3 minutes.
  5. Push the beef to the side and add minced garlic, cooking until fragrant (about 30 seconds).
  6. Add the sliced bell peppers and onions, stir-frying for roughly 4-5 minutes.
  7. Pour in more soy sauce, stir to combine, and add green onions just before finishing.
