Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 cup fresh orange juice
- 2 tablespoons fresh orange zest
- 1 teaspoon vanilla extract
- 1 cup heavy cream (for frosting)
- ½ cup confectioner’s sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- Cream the butter and sugar in a large mixing bowl until light and fluffy (about 3-4 minutes).
- Add eggs one at a time and then mix in the vanilla extract.
- Gradually add the orange juice and zest; mix until just combined.
- Fold in the dry ingredients until combined, being careful not to overmix.
- Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool in pans for 10 minutes before transferring to wire racks to cool completely.
- For frosting, beat heavy cream until soft peaks form. Gradually add confectioner’s sugar and mix until stiff peaks form.
- Frost in between layers and on top of the cooled cake.
Notes
For added flavor, mix a bit of orange extract into the frosting or use food coloring for a vibrant hue. Ensure the cake is completely cool before frosting.
