Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup fresh orange juice
  • 2 tablespoons fresh orange zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for frosting)
  • ½ cup confectioner’s sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. Cream the butter and sugar in a large mixing bowl until light and fluffy (about 3-4 minutes).
  5. Add eggs one at a time and then mix in the vanilla extract.
  6. Gradually add the orange juice and zest; mix until just combined.
  7. Fold in the dry ingredients until combined, being careful not to overmix.
  8. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  10. For frosting, beat heavy cream until soft peaks form. Gradually add confectioner’s sugar and mix until stiff peaks form.
  11. Frost in between layers and on top of the cooled cake.

Notes

For added flavor, mix a bit of orange extract into the frosting or use food coloring for a vibrant hue. Ensure the cake is completely cool before frosting.
