- 2 ripe mangoes, flesh removed
- 1 cup coconut cream
- 1 tablespoon gelatin (or agar-agar for a vegetarian option)
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon or lime juice
Instructions
- Bloom the gelatin in cold water for about 5 minutes.
- Blend the mango flesh with lemon or lime juice until smooth.
- Gently heat the coconut cream in a saucepan and stir in the bloomed gelatin until melted.
- Mix the mango puree, sugar, and vanilla into the coconut cream.
- Pour the mixture into molds and refrigerate for 4-6 hours or overnight.
- Serve topped with fresh fruit or a drizzle of passion fruit syrup.
Notes
Make sure to fully bloom the gelatin for the best texture and chill overnight for optimal results.
