Instructions

  1. Bloom the gelatin in cold water for about 5 minutes.
  2. Blend the mango flesh with lemon or lime juice until smooth.
  3. Gently heat the coconut cream in a saucepan and stir in the bloomed gelatin until melted.
  4. Mix the mango puree, sugar, and vanilla into the coconut cream.
