Ingredients
- 8 oz cream cheese
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 1 1/2 cups graham crackers, crushed
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- Fresh fruit (strawberries, blueberries, peaches)
Instructions
- Prepare the crust: Crush the graham crackers and mix with melted butter and sugar. Press into a lined springform pan.
- Make the filling: Beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined. Whip the cream until soft peaks form and fold into the cream cheese mixture.
- Add lemon juice and stir until just combined.
- Layer the cheesecake filling on top of the crust and refrigerate for at least 4 hours, preferably overnight.
- Top with fresh fruit and optional honey or fruit purée before serving.
Notes
Ensure cream cheese is at room temperature for a smooth consistency. Avoid overbeating the cream.
