Ingredients
- 2 slices whole grain or sourdough bread
- 1 ripe mango, sliced
- 1/2 cup Greek yogurt (or any variety)
- Honey (optional)
- Fresh herbs (basil or mint, optional)
Instructions
- Peel and slice the mango into thin pieces.
- Lightly toast the bread until golden brown.
- Spread yogurt generously over both slices of toasted bread.
- If using honey, drizzle it on top of the yogurt before adding mango.
- Layer the mango slices on one slice of bread.
- Sprinkle fresh herbs over the mango if desired.
- Top with the other slice of bread, press gently, and cut in half diagonally.
Notes
For added flavor, serve with a side of berries or a green salad. Experiment with different fruits or nut butters.
