A delightful and nutritious breakfast sandwich featuring fresh mango and creamy yogurt on toasted bread.

Ingredients

  • 2 slices whole grain or sourdough bread
  • 1 ripe mango, sliced
  • 1/2 cup Greek yogurt (or any variety)
  • Honey (optional)
  • Fresh herbs (basil or mint, optional)

Instructions

  1. Peel and slice the mango into thin pieces.
  2. Lightly toast the bread until golden brown.
  3. Spread yogurt generously over both slices of toasted bread.
  4. If using honey, drizzle it on top of the yogurt before adding mango.
  5. Layer the mango slices on one slice of bread.
  6. Sprinkle fresh herbs over the mango if desired.
  7. Top with the other slice of bread, press gently, and cut in half diagonally.

Notes

For added flavor, serve with a side of berries or a green salad. Experiment with different fruits or nut butters.
