Delightful mango cheesecake bars with a creamy filling and buttery crust, perfect for summer gatherings.

  • Total Time: 55 minutes
  • Yield: 12 servings

Ingredients

  • 8 oz cream cheese (room temperature)
  • 1 cup granulated sugar
  • 2 ripe fresh mangoes (peeled and chopped)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups graham cracker crumbs
  • ½ cup butter (melted)
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar; press into a greased baking dish and bake for 10 minutes.
  3. In a bowl, beat cream cheese until smooth, gradually adding sugar, then incorporate eggs one at a time.
  4. Fold in mango, vanilla extract, and lemon juice gently until combined.
  5. Pour the filling over the pre-baked crust and bake for 30-35 minutes until set with a slight jiggle in the center.
  6. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  7. Cut into squares and serve chilled, optionally garnished with mango slices or mango puree.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Allowing the bars to chill overnight improves flavor and texture.
