- 2 Fresh Lemons (zested and juiced)
- 1 cup Heavy Cream
- 1/2 cup Granulated Sugar
- 4 Egg Yolks
- 1 tablespoon Unflavored Gelatin
- 1 teaspoon Vanilla Extract
Instructions
- Prepare the Gelatin: Sprinkle the gelatin over a few tablespoons of cold water and let it bloom for about 5 minutes.
- Whisk Your Base: In a saucepan over low heat, combine sugar, lemon juice, lemon zest, and egg yolks. Whisk constantly until thick enough to coat the back of a spoon.
- Incorporate Gelatin: Stir the bloomed gelatin into the warm lemon mixture until fully dissolved. Set aside to cool.
- Whip the Cream: In a separate bowl, whip the cream until soft peaks form.
- Fold Together: Gently fold the lemon mixture into the whipped cream.
- Chill and Set: Pour into serving dishes and refrigerate for at least 4 hours.
- Serve: Garnish with fresh berries or mint before serving.
