Ingredients
- 2 cups boneless chicken (breast or thighs)
- 2 tablespoons fresh ginger (minced)
- 2-3 scallions (chopped, white and green parts separated)
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic (minced)
- 1 tablespoon cornstarch
- Cooking oil (for frying)
Instructions
- In a mixing bowl, combine chicken pieces with soy sauce, minced ginger, minced garlic, and sesame oil. Marinate for at least 15 minutes.
- Chop scallions into small pieces, keeping white and green parts separate.
- Heat oil in a large skillet over medium-high heat, then add sesame oil.
- Remove chicken from the marinade and sear in the skillet for about 5-7 minutes on each side until browned and cooked through.
- Add marinade and scallion whites to the skillet, cooking for another minute or two until sauce thickens.
- Plate chicken and garnish with scallion greens, serving with rice or vegetables.
Notes
For a vegetarian option, swap chicken with tofu. Use coconut aminos for a gluten-free version.
