Ingredients

  • 1/2 cup freshly squeezed key lime juice
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1 packet (1/4 oz) gelatin
  • 2 egg whites
  • 1 tsp vanilla extract
  • 2 tbsp cold water

Instructions

  1. In a bowl, combine sweetened condensed milk and key lime juice. Stir until well mixed.
  2. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. Heat until melted and smooth, then stir into the lime mixture.
  3. In another bowl, beat heavy cream until soft peaks form.
  4. Carefully fold the whipped cream into the lime mixture.
  5. In a clean bowl, whip egg whites until soft peaks form and gently fold into the mixture.
  6. Distribute mousse into serving cups and refrigerate for at least 4 hours or overnight.
  7. Before serving, garnish with whipped cream and a sprinkle of lime zest.

Notes

Use freshly squeezed key limes for the best flavor. Do not over-whip the cream and make sure gelatin is fully dissolved to achieve the right texture.
