Ingredients
- 1/2 cup freshly squeezed key lime juice
- 1 can (14 oz) sweetened condensed milk
- 1 cup heavy cream
- 1 packet (1/4 oz) gelatin
- 2 egg whites
- 1 tsp vanilla extract
- 2 tbsp cold water
Instructions
- In a bowl, combine sweetened condensed milk and key lime juice. Stir until well mixed.
- In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes. Heat until melted and smooth, then stir into the lime mixture.
- In another bowl, beat heavy cream until soft peaks form.
- Carefully fold the whipped cream into the lime mixture.
- In a clean bowl, whip egg whites until soft peaks form and gently fold into the mixture.
- Distribute mousse into serving cups and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with whipped cream and a sprinkle of lime zest.
Notes
Use freshly squeezed key limes for the best flavor. Do not over-whip the cream and make sure gelatin is fully dissolved to achieve the right texture.
