Ingredients

  • 4 boneless chicken thighs
  • 1 cup cremini mushrooms, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1/2 cup mozzarella or sharp cheddar cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, and sauté mushrooms and garlic for 5-7 minutes. Season with salt and pepper.
  3. Lay out the chicken thighs skin-side down and pound to an even thickness.
  4. Spread the sautéed mushrooms and garlic mixture over each thigh and top with cheese.
  5. Roll each thigh tightly and secure them with kitchen twine or toothpicks.
  6. Sear rolls seam-side down in the skillet until golden brown, about 3-4 minutes per side.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  8. Let rest for 5 minutes before slicing and serving.

Feel free to substitute turkey thighs for a leaner option or use seasonal vegetables for a vegetarian version.
