Ingredients
- 4 boneless chicken thighs
- 1 cup cremini mushrooms, chopped
- 4 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 1/2 cup mozzarella or sharp cheddar cheese
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon smoked paprika (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, and sauté mushrooms and garlic for 5-7 minutes. Season with salt and pepper.
- Lay out the chicken thighs skin-side down and pound to an even thickness.
- Spread the sautéed mushrooms and garlic mixture over each thigh and top with cheese.
- Roll each thigh tightly and secure them with kitchen twine or toothpicks.
- Sear rolls seam-side down in the skillet until golden brown, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.
Notes
Feel free to substitute turkey thighs for a leaner option or use seasonal vegetables for a vegetarian version.
