A classic Japanese egg sandwich featuring creamy, seasoned egg filling nestled between soft, crustless bread.

Ingredients

  • 6 large eggs
  • 1 tablespoon mayonnaise
  • 1 dash soy sauce
  • 1 sprinkle salt
  • 1 pinch sugar
  • 4 slices soft white bread (e.g., Shokupan)
  • Chopped green onions or herbs (optional)
  • Butter for cooking

Instructions

  1. In a bowl, whisk together eggs, mayonnaise, soy sauce, salt, and sugar.
  2. In a non-stick skillet over medium heat, melt a little butter and add the egg mixture. Stir gently and cook until just set, about 5 minutes.
  3. Lay out four pieces of bread and distribute the egg mixture on two slices. Top with green onions if desired, then place the other slices of bread on top and press down lightly. Cut off the crusts.
  4. Slice the sandwiches into quarters or halves and serve.
