- 4 thick-cut pork chops (bone-in or boneless)
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme or rosemary

Instructions
- Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
- In a small bowl, whisk together honey, Dijon mustard, minced garlic, and herbs until thick and glossy.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Add the pork chops and sear for 4-5 minutes on each side until golden brown.
- Pour the honey mustard mixture over the chops, reduce the heat to medium-low, and let the glaze bubble and thicken for about 5 minutes, flipping once.
- Check the internal temperature for doneness; it should reach 145°F.
- Let the chops rest for a few minutes before serving to allow the juices to redistribute.
Notes
For substitutions, try brown sugar instead of honey or use chicken for a leaner option. Be mindful to baste the chops with glaze during cooking.
