Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar (for glazing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan with butter or cooking spray.
  3. In a bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Set it aside.
  4. Cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  5. Beat in the eggs, one at a time, mixing well after each addition, then add the vanilla extract.
  6. Gradually add the dry ingredient mixture to the wet mixture, alternating with the milk, until just combined.
  7. In a small bowl, combine cinnamon and brown sugar for the swirl mixture.
  8. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture over it.
  9. Add the remaining batter on top and sprinkle the rest of the cinnamon mixture.
  10. Gently swirl through the batter to create a marbled effect.
  11. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  12. Let it cool before drizzling with a glaze made from powdered sugar and a splash of milk.
  13. Serve warm or at room temperature.

Notes

For a unique twist, substitute whole wheat flour for a nuttier flavor or use almond/oat milk as a dairy alternative. Avoid overmixing to keep the cake fluffy.
