- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar (for glazing)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan with butter or cooking spray.
- In a bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Set it aside.
- Cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Beat in the eggs, one at a time, mixing well after each addition, then add the vanilla extract.
- Gradually add the dry ingredient mixture to the wet mixture, alternating with the milk, until just combined.
- In a small bowl, combine cinnamon and brown sugar for the swirl mixture.
- Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture over it.
- Add the remaining batter on top and sprinkle the rest of the cinnamon mixture.
- Gently swirl through the batter to create a marbled effect.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool before drizzling with a glaze made from powdered sugar and a splash of milk.
- Serve warm or at room temperature.
Notes
For a unique twist, substitute whole wheat flour for a nuttier flavor or use almond/oat milk as a dairy alternative. Avoid overmixing to keep the cake fluffy.
