Deliciously soft and chewy homemade pretzel rolls with a shiny, crunchy exterior—perfect for sandwiches or served warm with butter.

Ingredients

  • 4 cups bread flour or all-purpose flour
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1 1/2 cups warm water
  • 1 tsp kosher salt
  • 1 tbsp sugar
  • 2/3 cup baking soda
  • Coarse salt for topping

Instructions

  1. In a bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Gradually add yeast mixture and knead until smooth and elastic, about 5-7 minutes.
  3. Form the dough into a ball and place it in a greased bowl. Cover and let rise in a warm place until doubled, about 1 hour.
  4. Punch down the dough, divide it into equal pieces, and shape into rolls.
  5. In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a gentle boil. Boil each roll for 30 seconds.
  6. Preheat the oven to 425°F (220°C). Place boiled rolls on a parchment-lined baking sheet and sprinkle with coarse salt.
  7. Bake for 12-15 minutes until golden brown. Let cool slightly before serving.

Notes

For a gluten-free version, use a gluten-free flour blend. You can also brush the rolls with melted garlic butter right after baking for extra flavor.
