Ingredients
- 4 cups bread flour or all-purpose flour
- 1 packet active dry yeast (2 1/4 tsp)
- 1 1/2 cups warm water
- 1 tsp kosher salt
- 1 tbsp sugar
- 2/3 cup baking soda
- Coarse salt for topping
Instructions
- In a bowl, combine warm water and sugar. Sprinkle yeast on top and let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Gradually add yeast mixture and knead until smooth and elastic, about 5-7 minutes.
- Form the dough into a ball and place it in a greased bowl. Cover and let rise in a warm place until doubled, about 1 hour.
- Punch down the dough, divide it into equal pieces, and shape into rolls.
- In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a gentle boil. Boil each roll for 30 seconds.
- Preheat the oven to 425°F (220°C). Place boiled rolls on a parchment-lined baking sheet and sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown. Let cool slightly before serving.
Notes
For a gluten-free version, use a gluten-free flour blend. You can also brush the rolls with melted garlic butter right after baking for extra flavor.
