Ingredients
- 1 lb ground turkey
- 3 bell peppers (red, yellow, green)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup cooked brown rice or quinoa
- 1 cup shredded cheddar or mozzarella cheese
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the peppers: Cut the tops off the bell peppers and remove the seeds.
- Sauté the filling: In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, cooking until soft. Stir in ground turkey and cook until browned. Season with cumin, paprika, salt, and pepper.
- Mix in grains and cheese: Once the turkey is cooked, stir in cooked rice or quinoa and shredded cheese until well combined.
- Stuff the peppers: Spoon the turkey mixture into each bell pepper, packing it in gently. Place upright in a baking dish.
- Top with cheese: Sprinkle cheese over the filled peppers.
- Bake: Cover with foil and bake for 30 minutes. Remove foil and continue baking for an additional 15 minutes until peppers are tender.
- Serve and enjoy: Drizzle with balsamic glaze or sprinkle fresh herbs before serving.
Notes
For extra flavor, consider adding Italian herbs or BBQ sauce to the filling. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
