Delicious gingerbread truffles coated in chocolate, rich with molasses and warming spices, perfect for the holiday season.

Ingredients

  • 1 cup graham cracker crumbs
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup molasses
  • 8 oz cream cheese, softened
  • 8 oz chocolate (dark or milk), for coating
  • 1/2 cup powdered sugar
  • Optional: chopped pecans or walnuts

Instructions

  1. Combine graham cracker crumbs, ground ginger, cinnamon, nutmeg, and powdered sugar in a large bowl; stir well to blend.
  2. In a separate bowl, mix cream cheese and molasses until smooth.
  3. Gradually add dry ingredients to the cream cheese mixture, stirring until fully combined. If desired, fold in nuts.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Roll the mixture into small balls (about 1 inch in diameter).
  6. Melt the chocolate in a double boiler or microwave until smooth.
  7. Coat each truffle in chocolate, tapping off excess before placing on a lined baking sheet.
  8. Sprinkle sea salt or chopped nuts on top if desired.
  9. Allow chocolate to harden at room temperature or in the fridge.
  10. Serve on a platter and enjoy!

Notes

These truffles can also be flavored with additional spices like clove or allspice and can be stored in an airtight container for up to a week.
