- 1 cup fresh blueberries
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt until well-combined.
- In another bowl, beat the egg, then add milk and melted butter. Mix until well-combined.
- Gradually pour the wet mixture into the dry mixture, stirring until just combined. A few lumps are fine.
- Gently fold in the fresh blueberries.
- Preheat a non-stick skillet over medium heat; lightly grease it with butter or cooking spray.
- Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles appear on the surface (about 2-3 minutes), then flip and cook for another 2 minutes until golden brown.
- Plate the pancakes and drizzle with maple syrup, add a pat of butter, or sprinkle with powdered sugar.
Notes
For added flavor, consider adding lemon zest or mini chocolate chips. Ensure ingredients like eggs and milk are at room temperature for fluffier pancakes.
