Ingredients
- 2 cups fresh cranberries
- 1 thumb-sized piece of fresh ginger, peeled and sliced thinly
- 3/4 cup granulated sugar (or to taste)
- 4 cups water
- 1/2 cup fresh lemon or orange juice
- 4 cups ginger ale or tonic water
- Optional: vodka or rum to taste
Instructions
- Rinse the fresh cranberries under cold water. If using frozen cranberries, add them straight into the pot.
- In a saucepan, combine cranberries, sliced ginger, sugar, and water. Bring to a gentle simmer over medium heat, stirring occasionally.
- Lower the heat and maintain a light simmer, cooking for 15-20 minutes until the cranberries pop and release juices.
- Remove from heat and strain the mixture into a large serving bowl or pitcher.
- Add fresh lemon or orange juice, adjusting sweetness if necessary.
- Let cool to room temperature, then refrigerate for at least an hour.
- Before serving, fill glasses with ice, pour the punch over, and top with ginger ale or tonic water.
- Garnish with whole cranberries, orange slices, or mint as desired.
Notes
Taste as you go to adjust sweetness. Can be made one day in advance; add soda just before serving.
