Ingredients
- 1 lb boneless chicken (breast or thighs)
- 1 cup panko or regular bread crumbs
- 3 cloves garlic, minced
- 1 egg, beaten
- Fresh herbs (parsley and thyme)
- Salt and pepper to taste
- Oil spray for baking
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine minced chicken, garlic, and herbs. Season with salt and pepper.
- Form the chicken mixture into compact rolls.
- Dip each roll into the beaten egg, then coat with breadcrumbs.
- Place the rolls on the baking sheet and spray with oil.
- Bake for 20-25 minutes until golden brown and cooked through (internal temp should reach 165°F).
- Let rest for a few minutes before serving.
