Ingredients
- 4 ripe tomatoes (or 1 can diced tomatoes)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 2 cloves garlic
- 4 large eggs
- 1/2 cup feta cheese
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Red chili flakes (to taste)
- Fresh parsley or cilantro (for garnish)
- Olive oil (for sautéing)
- Salt and pepper (to taste)
Instructions
- Dice the onion and bell peppers, and mince the garlic.
- Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent, about 3-4 minutes.
- Add the bell peppers and garlic; cook for another 2 minutes.
- Stir in the tomatoes, cumin, smoked paprika, and chili flakes. Simmer for 10-15 minutes until thickened.
- Crumble half of the feta into the sauce and stir until melted.
- Create wells in the sauce and crack each egg into a well. Season with salt and pepper. Cover and poach for 5-7 minutes.
- Garnish with remaining feta and fresh herbs. Serve warm.
Notes
Best served with crusty bread for dipping. Adjust the spice level to your preference.
