A flavorful dish with poached eggs in a spiced tomato sauce, enhanced with creamy feta cheese.

Ingredients

  • 4 ripe tomatoes (or 1 can diced tomatoes)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 2 cloves garlic
  • 4 large eggs
  • 1/2 cup feta cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Red chili flakes (to taste)
  • Fresh parsley or cilantro (for garnish)
  • Olive oil (for sautéing)
  • Salt and pepper (to taste)

Instructions

  1. Dice the onion and bell peppers, and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent, about 3-4 minutes.
  3. Add the bell peppers and garlic; cook for another 2 minutes.
  4. Stir in the tomatoes, cumin, smoked paprika, and chili flakes. Simmer for 10-15 minutes until thickened.
  5. Crumble half of the feta into the sauce and stir until melted.
  6. Create wells in the sauce and crack each egg into a well. Season with salt and pepper. Cover and poach for 5-7 minutes.
  7. Garnish with remaining feta and fresh herbs. Serve warm.

Notes

Best served with crusty bread for dipping. Adjust the spice level to your preference.
