Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable shortening
Instructions
- Prepare Your Tools: Gather a mixing bowl, a baking sheet lined with parchment paper, and a microwave-safe bowl for melting chocolate.
- Mix Peanut Butter Mixture: In a large mixing bowl, combine creamy peanut butter, softened unsalted butter, and powdered sugar. Stir until smooth and well combined.
- Form the Balls: Scoop tablespoons of the mixture and roll into small balls about 1 inch in diameter. Place them onto your prepared baking sheet.
- Chill the Balls: Refrigerate the peanut butter balls for at least 30 minutes, allowing them to firm up for a perfect dip.
- Melt the Chocolate: In a microwave-safe bowl, combine semi-sweet chocolate chips and vegetable shortening. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
- Dip and Set: Remove the peanut butter balls from the refrigerator. Using a fork, dip each ball into the melted chocolate, covering them completely. Place them back on the parchment-lined baking sheet.
- Chill Again: Return the dipped Buckeyes to the fridge for an additional 30 minutes or until the chocolate hardens.
- Serve and Enjoy: Once set, enjoy your homemade Buckeyes. They can be stored in an airtight container for up to a week.
Notes
For a vegan option, use dairy-free chocolate chips and substitute coconut oil for the butter.
